Sweet & Sour Zucchini
Prep: 10 min, plus refrigeration time.
  • 4 zucchini, thinly sliced
  • 3/4 cup honey
  • 1/2 cup white wine vinegar
  • 1/3 cup vegetable oil
  • 1/4 cup green bell pepper, seeeded and chopped
  • 1/4 cup celery, diced
  • 1 Tbs. onion, chopped
  • 1 tsp. salt (optional)
  • 1 tsp. black pepper

Combine all ingredients in a glass or ceramic bowl. Cover and refrigerate overnight. Drain and serve chilled or at room temperature.
