Chocolate Marshmallow Sundaes

- 2 cups sugar
- 1 cup boiling water
- 1/4 cup cocoa
- 1 tsp. vanilla extract
- 1/2 cup packaged white marshmallows, chopped or 1/2 cup mini marshmallows
- 2 cups lowfat vanilla frozen yogurt
Cook sugar and water in a saucepan over medium high heat until a candy thermometer registers 220°F. Remove from heat. Stir in cocoa, vanilla and marshmallows until melted. Let cool, without stirring, until bottom of pan just feels warm. Beat until thickened and serve warm over frozen yogurt.
