Beat egg with an electric mixer until light in color. Gradually beat in sugar. Mix in next 3 ingredients. Let stand 5 minutes. Transfer to a heavy saucepan. Cook 4-5 minutes over medium high heat, stirring frequently until mixture comes to a boil. Remove from heat. Cover with plastic wrap, pressing down on pudding surface to prevent skin from forming. Let cool 20 minutes. Fold in pineapple and marshmallows and chill. Fold in whipped topping and cherries just before serving. This recipe serves 6 people.
