Roasted Lamb Shanks
Prep: 5 min, Cook: 2:00.
  • 4 lamb shanks, fat trimmed
  • 3/4 cup hot water
  • 2 tsp. prepared mustard
  • 2 tsp. beef stock powder
  • 2 tsp. horseradish sauce
  • 2 cloves garlic, crushed
  • 3 Tbs. apple or mint jelly
  • 2 Tbs. lemon juice

Turn on broiler. Broil lamb 4 inches from heat source to brown on all sides. Preheat oven to 350°F. Transfer lamb to a covered roasting pan large enough to hold shanks in a single layer. Add remaining ingredients and stir well. Cover and bake 1-1/2 to 2 hours, or until very tender.
