Taco-Nacho Pizzas
Prep: 15 min, Cook: 30 min, plus rising time.
  • 1 lb. Texas white rolls
  • 1 lb. lean ground beef
  • 1 packet taco seasoning mix
  • 1 lb. canned refried beans
  • 1-2/3 cups salsa
  • 1 cup sliced ripe olives
  • 3 cups tortilla chips, crushed
  • 3/4 cup enchilada sauce
  • 2 cups Colby Jack Cheese, grated

Allow rolls to thaw and rise according to package directions. Preheat oven to 350°F. Cook ground beef with taco seasoning according to the directions on the packet. Flatten each roll into a 5 inch circle. Place circles on baking sheets sprayed with nonstick cooking spray. Combine ground beef mixture, beans and salsa in a bowl. Spread on circles, and add olives. Toss taco chips with enchilada sauce and spoon on pizzas. Top each pizza with grated cheese. Bake 20 minutes or until edges are lightly browned.
