Cabbage and Apple Salad with Dijon
Prep: 10 min, Cook: 5 min.
  • 1/4 cup chopped walnuts
  • 1 lb. cole slaw
  • 1 apple, peeled, cored and shredded
  • 2 Tbs. plus 2 tsp. red wine vinegar
  • 1 tsp. Dijon mustard
  • 1/4 cup virgin olive oil

Preheat oven to 350°F. Place walnuts in a shallow pan and toast in oven 5-7 minutes, or until golden. Shake pan at 3 minute intervals. Transfer to a dish to cool. Combine cabbage and apple in a salad bowl. Combine next 3 ingredients and salt and pepper to taste in a jar with a tight-fitting lid. Shake vigorously and pour dressing over salad. Toss and sprinkle with walnuts.
