Preheat oven to 350°F. Butter 2 muffin cups per serving and set aside. Using an electric mixer, cream butter and brown sugar in a mixing bowl. Beat in egg whites and vanilla until smooth. Stir in remaining ingredients, except raisins, until just moistened. Fold raisins into lumpy batter. Spoon into muffin cups. Bake 20-25 minutes or until tester comes out clean when inserted in center. Let cool 5 minutes in cups. This recipe serves 6 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 6 only.
