Orange-Nut Rice
Prep: 10 min, Marinate: 10 min, Cook: 20 min.
  • 2 cups water
  • 1 tsp. unsalted butter
  • 1 cup long grain rice
  • 1 tsp. orange zest
  • 1 orange, peeled and chopped
  • 1/4 cup slivered almonds

Bring water to a boil in a heavy saucepan over high heat. Stir in butter, rice and orange zest and return to a boil.

Immediately reduce heat to low. Cover saucepan and simmer 20-25 minutes or until rice is tender and liquid is absorbed. Remove from heat and set aside 10 minutes. Stir in remaining ingredients and salt and pepper to taste.
