Dilled Okra
Prep: 10 min, Cook: 30 min.
  • 2 Tbs. vegetable stock
  • 1 tsp. unsalted butter, melted
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. chili pepper flakes
  • 1 clove garlic, crushed
  • 1/2 lb. okra, thawed, if frozen, trimmed, leaving pod intact
  • 1 Tbs. scallions, chopped
  • 1/2 tsp. fresh dill, chopped, or 1/4 tsp. dried
  • 2 tsp. lemon juice

Preheat oven to 450°F. Combine first 6 ingredients in a bowl. Add okra and toss gently. Stir in scallions and dill. Transfer to a lightly oiled baking dish and bake 30 minutes. Sprinkle with lemon juice.
