Lighter Taco Joe's Sandwiches
Prep: 5 min, Cook: 10 min.
  • 1 lb. lean ground beef
  • 1/2 onion, chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1/2 cup tomatoes, chopped
  • 1-1/4 cups lowfat cream of mushroom soup
  • 1 tsp. chilli powder
  • 4 hamburger buns
  • 1/4 lb. lettuce, shredded
  • 1 cup fat-free cheddar cheese

Sauté beef, onion and bell pepper in a heavy nonstick skillet over medium high heat about 4 minutes, or until browned, stirring frequently. Stir in next 3 ingredients and simmer 3-4 minutes, stirring occasionally until thickened. Serve on hamburger buns topped with lettuce and cheese.
