Apple Stuffed Turkey Thighs
Prep: 10 min, Cook: 25 min.
  • 4 boneless turkey thighs
  • 2 apples, washed, unpeeled, cored and chopped
  • 1/2 cup raisins
  • 3/4 cup plain breadcrumbs
  • 1 Tbs. brown sugar
  • 1/2 tsp. ground cloves
  • 3 Tbs. unsalted butter, half of it melted
  • 2 Tbs. parsley, chopped
  • toothpick
  • 1/2 cup chicken stock

Using a sharp knife, without cutting all the way through, cut horizontally 2/3 of the way through each turkey thigh to form a pocket. Combine next 5 ingredients and salt and pepper to taste in a bowl. Stir in melted butter and parsley. Let sit 5 minutes. Spoon stuffing into each turkey thigh. Close securely with toothpicks.

Preheat oven to 375°F. Melt remaining butter in a heavy nonstick skillet over medium high heat. Cook turkey 3-4 minutes per side until browned. Transfer to a shallow roasting pan and roast in oven 50-60 minutes, basting occasionally with stock and pan drippings until turkey is cooked throughout.
