Rusty's Banana Double Chocolate Pudding
Prep: 10 min, Cook: 15 min.
  • 1 cup sugar
  • 3 Tbs. cornstarch
  • 3 Tbs. cocoa powder, heaping
  • 3 Tbs. all purpose flour
  • 3 cups lowfat milk
  • 3 egg yolks
  • 2 tsp. unsalted butter
  • 1 tsp. vanilla extract
  • 1/2 lb. vanilla wafers
  • 1/2 cup light hot fudge topping
  • 2 large bananas, just ripe and cut into 1/2 inch slices

Combine first 4 ingredients in a non-reactive saucepan. Add milk and egg yolks to mixture. Whisk vigorously over medium high heat. Stir constantly until mixture comes to a boil. Immediately remove from heat. Add butter and vanilla. Stir until butter is incorporated. Cover with plastic wrap, pressing down on pudding to prevent skin from forming. Set pan in cold water to cool. Arrange one-third of the vanilla wafers in bottom of a wide serving bowl. Drizzle with half the topping. Layer with half of banana slices. Add half of the pudding. Repeat with another third of the wafers, remaining bananas, remaining topping and remaining pudding. End with a layer of wafers. Cover tightly with plastic wrap and chill until ready to serve.
