Rusty's Banana Wafer Pie
Prep: 20 min, Cook: 10 min, plus chilling time.
  • 1 cup sugar
  • 3 Tbs. cornstarch
  • 3 Tbs. all purpose flour
  • 3 cups milk
  • 3 egg yolks
  • 2 Tbs. unsalted butter
  • 1 tsp. vanilla extract
  • 1 cup whipping cream
  • 1 Tbs. powdered sugar
  • 60 vanilla wafers
  • 1/2 cup light hot fudge topping
  • 2 large bananas, sliced

Combine sugar, cornstarch and flour in a non-reactive saucepan. Add milk and egg yolks to mixture. Whisk vigorously over medium-high heat. Stir constantly until mixture comes to a boil. Immediately remove from heat. Add butter and vanilla. Stir until butter is incorporated. Transfer to a serving bowl and cover with plastic wrap, pressing down on pudding to prevent skin from forming. Set bowl with pudding in cold water to cool.

Using chilled beaters and bowl, whip cream and powdered sugar to soft peaks. Spread 1/3 of the whipped cream over bottom of a wide serving bowl. Arrange 1/3 of the vanilla wafers over top. Drizzle with half the fudge topping. Layer with half of banana slices. Add half of the pudding. Spread another 1/3 of the whipped cream over pudding. Repeat with another 1/3 of the wafers, remaining bananas, fudge topping, pudding and whipped cream. Top with wafers. Cover tightly with plastic wrap and chill until ready to serve.
