Combine sugar, cornstarch and flour in a non-reactive saucepan. Add milk and egg yolks to mixture. Whisk vigorously over medium-high heat. Stir constantly until mixture comes to a boil. Immediately remove from heat. Add butter and vanilla. Stir until butter is incorporated. Transfer to a serving bowl and cover with plastic wrap, pressing down on pudding to prevent skin from forming.
