Spice Cake with Lemon Ricotta & Berries

Rich ricotta cheese, tart lemon and your choice of sweet, juicy berries take a simple spice cake from drab to decadent.

Prep: 10 min, Cook: 30 min.
  • 1 spice cake mix
  • 1/2 lb. ricotta cheese
  • 2 lemons
  • 1/4 lb. fresh blueberries, or berries of your choice

Prepare spice cake according to directions. Remove from oven and cool.

Place the ricotta cheese in a mixing bowl. Using a box grater remove the rind from the two lemons. Slice the lemons in half and squeeze juice into mixing bowl with ricotta cheese and grated lemon rind. Mix well.

Slice cake and serve with lemon ricotta cheese and garnish with fresh berries.
