Bison Dinner in a Skillet
Prep: 10 min, Cook: 25 min.
  • 1-1/2 tsp. salt (optional)
  • 1/2 tsp. pepper
  • 1/2 tsp. ground paprika
  • 1/4 tsp. garlic powder
  • 1-1/2 lbs. top sirloin bison steak, 1 inch thick
  • 2 tsp. vegetable oil
  • 2 Tbs. water
  • 1 onion, chopped
  • 2 potatoes, peeled and cut into French-fry style strips
  • 1 Tbs. slivered almonds
  • 1 cup tomato sauce
  • 1 cup beef stock
  • 1 tsp. sugar
  • 10 ounces frozen French cut green beans, or mixed vegetables
  • 4 whole wheat dinner rolls

Combine first 4 ingredients and rub over meat. Heat oil in a heavy nonstick skillet over medium heat. Cook steaks 5 minutes per side, or until browned. Transfer meat to a platter and set aside. Add onion and potato, increase heat to medium high and sauté 3 minutes. Stir in next 4 ingredients and bring to a boil, stirring frequently. Stir in beans and meat. Cover and simmer over medium heat about 10 minutes or until beans are tender. Serve with rolls.
