Stadium Meatloaf
Prep: 10 min, Cook: 40 min.
  • 1/3 cup spicy brown mustard
  • 1/2 cup sweet pickle relish, with juices
  • 3/4 cup fresh breadcrumbs
  • 1 egg
  • 1 small onion, chopped
  • 1 tsp. garlic salt
  • 3/4 lb. ground bison
  • 3/4 lb. lean ground pork
  • 1-1/2 tsp. brown sugar

Preheat oven to 350°F. Combine 1/3 cup mustard, and next 5 ingredients in a medium bowl. Season with salt and pepper to taste. Mix to blend well. Add ground bison and ground pork and mix until combined. Pack mixture into an 8x4 inch loaf pan. (Dish can be prepared to this point; cover and refrigerate for 1 day before baking.) Place on a baking sheet and bake 35-40 minutes or until a meat thermometer inserted in center of loaf reads 160°F. Combine remaining 1 Tbs. mustard with brown sugar in a small bowl. Brush mixture over top of meatloaf and bake about 5 minutes or until topping is glazed. Let stand 5 minutes before slicing.
