Bison Cheeseburger Pie
Prep: 15 min, Cook: 35 min.
  • 1 lb. ground bison
  • 1 large onion, chopped
  • 2 Tbs. ketchup
  • 1-1/2 cups frozen hash brown potatoes
  • 1 cup shredded fat-free cheddar cheese
  • 1-1/2 cups skim milk
  • 3/4 cup buttermilk baking mix
  • 3 eggs
  • 1/4 cup steak sauce or ketchup

Preheat oven to 400°F. Heat a heavy 10 inch ovenproof skillet over medium high heat. Add bison and onion. Sauté 4-5 minutes, stirring to break up meat, until browned. Remove from heat and discard excess fat. Stir in ketchup and salt and pepper to taste. Stir in potatoes. Sprinkle with cheese. Combine remaining ingredients, except steak sauce, in a bowl. (Batter will be lumpy.) Pour over meat mixture and bake about 30 minutes until tester comes out clean when inserted in biscuit topping. Let stand 5 minutes before slicing. Serve pie with steak sauce.
