Heat oil in a heavy nonstick skillet over medium high heat. Sauté bison 2-3 minutes, stirring constantly, or until browned. Transfer to a platter. Add onion and garlic to same skillet. Sauté 3-4 minutes or until onion begins to soften. Return bison and remaining ingredients to skillet. Season with salt and pepper to taste. Reduce heat to low. Cover and simmer 35-40 minutes or until sauce is thickened and bison is tender.
