Bison Stroganoff
Prep: 10 min, Cook: 20 min.
  • 1 package beef stew seasoning
  • 3/4 cup water
  • 1 Tbs. oil
  • 1-1/2 lbs. top sirloin bison steak, 1 inch thick, or rib eye, filet, NY strip, or skinless chicken, cut into thin strips
  • 6 ounces canned sliced mushrooms, drained
  • 1 cup light sour cream
  • 1/2 lb. egg noodles, cooked
  • 2 Tbs. parsley, chopped

Combine first 2 ingredients in a bowl and set aside. Heat oil in a heavy nonstick skillet over medium-high heat. Sauté meat 4-6 minutes, or until cooked throughout. Add seasoning mixture, mushrooms and sour cream. Stir until mixture is smooth and creamy. Cover pan, reduce heat to low and simmer 10 minutes. Serve over cooked egg noodles and garnish with chopped parsley.
