Bison Chili-Roni
Prep: 10 min, Cook: 25 min.
  • 1 lb. ground bison
  • 1 package chili seasoning mix
  • 1/2 cup onion, chopped
  • 1/2 cup red or green bell pepper, chopped, optional
  • 1-3/4 cups canned tomatoes, chopped
  • 3/4 cup water
  • 2 cups elbow macaroni, cooked and drained
  • 1/2 cup shredded cheddar cheese

Sauté ground bison in a heavy nonstick skillet over medium-high heat until browned. Drain excess fat from skillet and stir in next 5 ingredients. Bring to a boil. Reduce heat to low and simmer 15 minutes. Add cooked macaroni and simmer another 5 minutes. Sprinkle with cheese before serving.
