Fruit Crisp Delight
Prep: 15 min, Cook: 30 min.
  • 3/4 cup quick or old fashioned oatmeal, uncooked
  • 1/4 cup plus 3 Tbs. brown sugar, firmly packed
  • 2 Tbs. unsalted butter, melted
  • 3/4 tsp. ground cinnamon
  • 4-1/3 cups apples, peaches or pears, peeled, thinly sliced
  • 1/4 cup water
  • 2 Tbs. all purpose flour
  • 4 cups nonfat frozen yogurt

Preheat oven to 350°F. Combine oatmeal, 3 Tbs. brown sugar, butter, and 1/4 tsp. cinnamon in a bowl. Mix well and set aside. Combine fruit and water in a bowl. Add remaining 1/4 cup brown sugar, flour and 1/2 tsp. cinnamon, tossing to coat. Spoon into an 8 inch square glass baking dish. Top with reserved oatmeal mixture. Bake 30-35 minutes or until fruit is tender. Serve warm with frozen yogurt.

Microwave directions: Follow recipe as directed above, except spoon fruit mixture into microwaveable baking dish. Set aside oatmeal mixture. Microwave on high 6 minutes, stirring once. Top with reserved oat mixture. Microwave on high 3-6 minutes or until fruit is tender.
