Tuna with Lemon and Herbs
Prep: 10 min, Marinate: 30 min, Cook: 10 min.
  • 4 tuna or swordfish steaks, about 6 ounces each
  • 2 Tbs. olive oil
  • 1-1/2 Tbs. lemon juice
  • 1-1/2 Tbs. dry vermouth or red wine vinegar
  • 2 tsp. rosemary, crumbled, or 1-1/2 Tbs. fresh, chopped
  • 3/4 tsp. thyme, crumbled, or 1 Tbs. fresh, chopped
  • 1/4 tsp. sugar
  • 1/4 tsp. pepper

Prepare grill or broiler. Arrange tuna steaks in a single layer in a shallow pan. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour over tuna and marinate 30 minutes at room temperature. Arrange tuna steaks on a broiler rack. Season with pepper to taste. Grill or broil 4-5 minutes per side, or until tuna is brown on the outside and slightly pink on the inside.
