Brie Torte
Prep: 10 min, plus chilling time.
  • 1 wheel Brie cheese, about 1 lb. each
  • 1/2 cup unsalted butter, softened
  • 1 large clove garlic, finely chopped
  • 1/3 cup walnuts, finely chopped
  • 1/3 cup ripe olives, finely chopped
  • 2 tsp. dried basil, or 2 Tbs. fresh, chopped

Chill Brie in freezer 30 minutes until very firm. Carefully cut into halves, horizontally. Set aside.

Cream butter and garlic together in a bowl. Mix in walnuts, olives and basil and blend thoroughly. Spread evenly on cut side of one of Brie halves. Top with the other half, cut side down. Press together lightly.

Wrap and chill at least 2 hours. Bring to room temperature before serving.
