Tofu Loaf
Prep: 10 min, Cook: 45 min.
  • 1 lb. tofu
  • 3 carrots, peeled and grated
  • 2 parsnips, peeled and grated
  • 1 cup green peas, thawed if frozen
  • 1/3 cup almonds, finely ground
  • 1/4 lb. cream cheese with chives, softened
  • 1 cup parsley, chopped

Preheat oven to 350°F. Combine all ingredients, except 1/2 cup parsley, in a large bowl. Mix well. Pour into a greased loaf pan. Bake 45-50 minutes, until firm. Sprinkle with remaining parsley and serve.
