Broiled Pork Chops with Cinnamon Apples
Prep: 15 min, Cook: 20 min.
  • 4 pork chops, about 6 ounces each
  • 4 carrots, sliced
  • 1 summer squash, sliced
  • 1 zucchini, sliced
  • 1/4 cup fat-free Italian dressing
  • 1 Tbs. unsalted butter
  • 2 Jonathan apples, cored and sliced thinly into rings
  • 1 Tbs. brown sugar
  • 1 tsp. ground cinnamon

Turn on broiler. Season pork chops with salt and pepper to taste. Broil chops 8-10 minutes per side about 5 inches from heat source. Place carrots in a steamer basket over boiling water. Cover saucepan and steam 4 minutes. Add remaining vegetables, cover pan and steam another 3-4 minutes, or until vegetables are just tender. Drain, season with salt and pepper to taste and toss with dressing. Melt butter in a heavy nonstick skillet over medium heat. Sauté apple rings 5-6 minutes, until tender. Sprinkle with sugar and cinnamon. Stir gently to blend. Serve pork with vegetables and apples.
