White Bean Salad with Tuna
Prep: 10 min.
  • 2-2/3 cups Romaine lettuce, shredded
  • 2 Tbs. plus 2 tsp. red wine vinegar
  • 1 Tbs. plus 1 tsp. capers
  • 1 Tbs. plus 1 tsp. olive oil
  • 3/4 tsp. dried rosemary
  • 2 cloves garlic, crushed
  • 1-1/4 lbs. canned navy beans, drained
  • 9 ounces white tuna in water, drained
  • 3 ounces pimentos, drained and diced

Combine all ingredients, and pepper to taste, in a bowl. Toss well. Serve at room temperature.
