Vegetable Burger
Prep: 10 min, Cook: 10 min.
  • 2 Tbs. unsalted butter
  • 1/2 onion, chopped
  • 1 celery rib, chopped
  • 1 carrots, peeled and chopped
  • 1 cup walnuts or pecans, finely ground
  • 1/2 cup seasoned dry breadcrumbs
  • 1/2 cup cooked rice
  • 2 eggs, beaten

Melt butter in a heavy nonstick skillet over medium-high heat. Sauté onion, celery and carrot 5-7 minutes, stirring frequently until softened. Let cool to lukewarm. Turn on broiler. Stir in remaining ingredients and salt and pepper to taste. Form mixture into patties. Arrange on broiler pan and broil 5 inchesfrom heat source about 5 minutes, until golden.
