Stir Fried Bay Scallops
Prep: 10 min, Cook: 5 min.
  • 1 Tbs. plus 1 tsp. oil
  • 1-1/4 lbs. bay scallops
  • 2 cloves garlic, crushed
  • 3/4 tsp. ground ginger
  • 1-1/4 scallions, chopped
  • 1-1/4 red or green bell peppers, seeded and sliced
  • 11 ounces pineapple chunks, drained
  • 1 Tbs. plus 1 tsp. teriyaki sauce

Heat oil in a heavy nonstick skillet or wok over high heat. Stir fry scallops, garlic and ginger 2 minutes. Add scallion and pepper and stir fry 2 minutes, or until heated through. Stir in pineapple chunks and teriyaki sauce. Cook 2 minutes.
