Lobster Salad
Prep: 10 min.
  • 1/2 lb. lobster meat or imitation lobster meat
  • 1/4 cup fresh mushrooms, sliced
  • 1 small yellow or green bell pepper, seeded and sliced
  • 2 Tbs. olive oil
  • 1/4 tsp. Italian herb seasoning
  • 4 lettuce leaves
  • 1/4 cup lemon juice
  • 2 Tbs. Parmesan cheese

Combine first 5 ingredients in a bowl. Serve on lettuce drizzled with fresh lemon juice and sprinkled with Parmesan cheese.
