Black Bean and Exotic Fruit Salsa
Prep: 15 min.
  • 5 ounces canned black beans, rinsed and drained
  • 2 Tbs. plus 2 tsp. mango, peeled and cubed
  • 2 Tbs. plus 2 tsp. papaya, peeled and diced
  • 1/3 cup pineapple, cubed
  • 2 Tbs. plus 2 tsp. red onion, diced
  • 1/8 tsp. habanero pepper sauce
  • 1 tsp. fresh cilantro, minced
  • 1 tsp. lime juice
  • 1 tsp. olive oil
  • 1/4 tsp. ground cumin
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 clove garlic, crushed

Combine all ingredients in a large bowl and toss gently to coat. Let stand 15 minutes before serving.
