Sour Cream Waffles
Prep: 10 min, Cook: 5 min.
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1-1/2 tsp. vanilla extract
  • 1 cup sour cream
  • 2 large eggs, separated, whites beaten to stiff peaks
  • 1-1/2 cups all purpose flour
  • 1 Tbs. baking powder
  • 2 Tbs. sugar

Preheat waffle iron. Combine first 4 ingredients and egg yolks in a bowl. Mix thoroughly. Sift dry ingredients together in a bowl. Stir into milk mixture until mixed thoroughly. Fold in beaten egg whites. When hot, lightly brush waffle iron surface with oil. Ladle about 3/4 cup batter per waffle onto waffle iron. Close cover and bake 4-5 minutes or until iron stops steaming. Open cover and use fork to remove waffle. Continue with remaining batter. Serve immediately with desired toppings or keep warm in 200°F oven.
