Pork a la King
Prep: 5 min, Cook: 10 min.
  • 2 Tbs. unsalted butter
  • 2 Tbs. all purpose flour
  • 2 cups milk
  • 3 Tbs. green bell pepper, seeded and diced
  • 3 ounces canned mushrooms, drained
  • 2 ounces pimento, diced, drained
  • 1 cup frozen peas, thawed
  • 1/4 tsp. thyme, crushed
  • 1 lb. cooked pork loin, cubed
  • 4 slices toast, or biscuits

Melt butter in a heavy nonstick saucepan over medium heat. Blend in flour. Whisk in milk and cook, stirring constantly, until thickened. Stir in next 5 ingredients and salt and pepper to taste. Gently stir in pork and warm through, stirring gently. Serve over toast.
