Lemony Pork Chops
Prep: 10 min, Marinate: 6:00, Cook: 15 min.
  • 1/4 cup lemon juice
  • 2 Tbs. vegetable oil
  • 2 Tbs. water
  • 2 Tbs. parsley, snipped
  • 2 tsp. chives, chopped
  • 1 tsp. tarragon, crushed
  • 1 tsp. lemon peel, grated
  • 1/2 tsp. savory, crushed
  • 4 pork loin chops, 1-1/4 inch thick

Combine all ingredients, except pork chops, in a saucepan over medium heat. Season with salt to taste. Simmer 3-4 minutes, stirring occasionally. Cool. Place pork chops in a plastic bag. Pour lemon juice mixture over and close bag. Tie securely and set in a shallow baking dish. Marinate in refrigerator 6-8 hours or overnight, turning occasionally. Drain chops, reserving marinade. Grill chops over medium coals about 8 minutes. Turn and grill about 8 minutes more, brushing occasionally with reserved marinade.
