New England Pork Tenderloin
Prep: 10 min, Cook: 30 min.
  • 1/4 cup apple jelly
  • 2 Tbs. lemon juice
  • 1/2 tsp. pumpkin pie spice
  • 1 lb. boneless pork tenderloin chops, trimmed
  • 2 Jonathan apples, unpeeled, cored, thinly sliced

Preheat oven to 375°F. Combine first 3 ingredients in a bowl and blend well. Place tenderloin on a rack that has been sprayed with nonstick cooking spray and place in a shallow pan. Brush tenderloin with half the apple jelly mixture. Roast 20-30 minutes per 1 lb., or until a meat thermometer registers 155°F. Let stand 5-10 minutes. Prepare broiler. Place apple slices on broiler pan and brush with remaining apple jelly mixture. Broil about 5 minutes or until apple slices are tender, about 6 inches from heat source. Slice tenderloin and serve with cooked apple slices.
