Thai Pork Broil
Prep: 15 min, Marinate: 1:30, Cook: 10 min.
  • 1/4 cup plus 2 Tbs. soy sauce
  • 2 cloves garlic, crushed
  • 1/4 cup rice vinegar
  • 2 Tbs. water
  • 1 Tbs. molasses
  • 1 tsp. crushed red pepper
  • 1/4 cup peanut butter
  • 2 Tbs. ground coriander
  • 2 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 1 Tbs. lemon juice
  • 1 Tbs. vegetable oil
  • 1 lb. boneless pork tenderloin chops, cut into 1 inch cubes
  • skewers

Combine 1/4 cup soy sauce, half the garlic, rice vinegar and next 3 ingredients in a bowl. Mix well. Add pork and marinate at least 30 minutes. Combine remaining soy sauce and garlic with peanut butter and next 5 ingredients in a blender or food processor. Blend well. Cover and let stand at least an hour for flavors to meld. Prepare grill or broiler. Thread marinated pork cubes onto skewers (if using bamboo skewers, soak skewers 20-30 minutes in water first). Grill over hot coals or broil 6 inches from heat source, 10-12 minutes, turning once. Serve pork with peanut sauce.
