Preheat oven to 450°F. Combine 2 cups flour and 1 tsp. salt in a food processor or bowl. Cut in shortening until mixture resembles coarse meal. Add water and process briefly until mixtures forms a ball. Transfer pastry to a lightly floured work surface. Cut dough in 2 pieces and roll out each piece to about an 8x12 inch rectangle. Arrange 1 piece in the bottom of a baking dish and set aside. This recipe serves 12 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 12 only.
