Party Pork Chops 'n Yams
Prep: 15 min, Cook: 35 min.
  • 1 Tbs. plus 1 tsp. unsalted butter
  • 4 smoked pork chops, cut 3/4 inch thick
  • 1-1/3 cups sweet potatoes, cooked and mashed
  • 2/3 cup crushed pineapple, drained, liquid reserved
  • 2 Tbs. maple syrup
  • 1/8 tsp. ground cinnamon
  • 3-1/2 Tbs. walnut pieces

Preheat oven to 350°F. Melt butter in a heavy nonstick skillet over medium heat. Sauté pork chops 2 minutes per side until browned on both sides. Place pork chops in a 13x9 inch baking pan. Combine mashed yams, pineapple, maple syrup, cinnamon and salt to taste in a bowl. Mix well. Spoon mixture over pork chops. Sprinkle with nuts. Pour pineapple liquid into pan. Bake uncovered 25-30 minutes or until yams are thoroughly heated.
