Pork and Broccoli Stir-Fry

- 11 ounces boneless pork sirloin, partially frozen
- 1/2 cup chicken stock
- 2 tsp. cornstarch
- 1 Tbs. plus 1 tsp. oyster sauce
- 2 tsp. soy sauce
- 1/8 tsp. ground ginger
- 2 tsp. vegetable oil
- 11 ounces broccoli florets
- 3/4 red or green bell pepper, seeded and cut into thin strips
- 1 clove garlic, crushed
- 1/3 cup fresh mushrooms, sliced
- 2 Tbs. plus 2 tsp. scallions, sliced
Slice pork across the grain into 1/4 inch slices. Combine next 5 ingredients in a bowl and set aside. Pour oil around top of preheated wok to cover sides. Heat oil over medium high heat.
Add pork, bell pepper and garlic. Stir fry 4 minutes or until pork is browned. Add broccoli florets, mushrooms and scallion. Stir fry 2 minutes. Stir stock mixture and gradually add to wok. Mix well.
Cook 3 minutes or until thickened and bubbly, stirring constantly.
