Parmesan Scrod
Prep: 10 min, Cook: 30 min.
  • 1 lb. scrod or cod
  • 2 Tbs. plus 2 tsp. mayonnaise
  • 2 tsp. Worcestershire sauce
  • 1 Tbs. minced onion flakes
  • 1 tsp. Dijon mustard
  • 1 tsp. sherry extract
  • 1 ounce grated Parmesan cheese

Preheat oven to 350°F. Arrange fish in a shallow buttered baking pan. Combine remaining ingredients, except cheese, in a bowl. Spread mayonnaise mixture over fillets. Sprinkle with Parmesan cheese. Bake, uncovered, 25-30 minutes, or until fish flakes easily.
