Grilled Cheese Sandwiches

- 8 slices whole wheat bread, very lightly toasted
- 1 Tbs. plus 1 tsp. unsalted butter
- 4 slices fat-free cheddar cheese
Heat a griddle or nonstick skillet over medium heat until hot. Butter one side of each piece of bread and place a slice of cheese between unbuttered sides of each pair. Cook about 2 minutes per side, or until golden and cheese has melted.
