Pork Divan

- 2 Tbs. unsalted butter
- 2 Tbs. all purpose flour
- 1-1/2 cups milk
- 1/2 cup grated Parmesan cheese
- 1/2 tsp. ground nutmeg
- 1 Tbs. dry sherry
- 1/2 tsp. Worcestershire sauce
- 1 tsp. vegetable oil
- 1 lb. boneless pork loin chops, 1 inch thick
- 1 lb. broccoli florets
Melt butter in a heavy saucepan over medium heat. Add flour and stir to blend. Add milk; cook and stir until sauce is thickened and smooth. Stir in 1/4 cup plus 2 Tbs. Parmesan cheese, nutmeg, sherry, and Worcestershire sauce. Set aside and keep warm.
Heat oil in a heavy nonstick skillet over medium high heat. Sauté chops 12-15 minutes, turning occasionally until cooked throughout. Meanwhile, place broccoli in a steamer basket over boiling water. Cover pan and steam 4-5 minutes or until just tender. Arrange broccoli on a serving platter. Pour 1 cup sauce over, top with chops and garnish with additional sauce. Sprinkle with reserved Parmesan cheese.
