Bistro Cheeseburger
Prep: 10 min, Cook: 15 min.
  • 1/4 cup mayonnaise
  • 1 Tbs. Dijon mustard
  • 1-1/2 lbs. lean ground beef
  • 2 Tbs. vegetable oil
  • 4 slices red onion, 1/2 inch thick
  • 8 slices Swiss cheese
  • 4 Kaiser rolls, split and toasted
  • 4 leaves Romaine lettuce
  • 4 slices tomato

Prepare grill or turn on broiler. Combine mayonnaise and mustard in a bowl and set aside. Season ground beef with salt and pepper to taste. Divide into 4 patties. Brush cut sides of onion with oil. Arrange onions and burgers on grill and cook uncovered, 5 inches from heat source 6-7 minutes per side, for medium-done meat and tender onions. Season onions with salt and pepper to taste. Place 2 pieces of cheese on each burger about a minute before burgers are done. Spread mustard mixture over toasted top half of each roll. Place lettuce and tomato on bottom half. Place cheeseburger over tomato and top with onion.
