Stuffed Pork Loin Genoa Style
Prep: 15 min, Cook: 1:30.
  • 1/2 cup fresh basil, chopped
  • 1-1/4 cups fresh parsley, chopped
  • 1/2 cup pine nuts
  • 6 cloves garlic, peeled and chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 lb. ground pork
  • 1 cup dry breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tsp. ground black pepper
  • 4 lbs. boneless pork sirloin roast
  • kitchen string

Preheat oven to 350°F. Blend together basil, 1 cup parsley and next 3 ingredients in a food processor or blender. Set aside. Mix ground pork, next 4 ingredients and 1/4 cup parsley in a bowl. Place pork roast fat side down. Spread with herb-cheese mixture and place ground pork mixture along center of loin. Fold in half and tie. Roast 1-1/2 hours. Slice.
