Apple Orchard Pork Chops
Prep: 15 min, Cook: 1:00.
  • 1-1/4 tsp. vegetable oil
  • 4 America's cut pork chops, cut 1-1/2 inch thick
  • 1-1/3 cups apple cider or apple juice
  • 3-1/2 Tbs. coarse mustard
  • 2 apples, unpared, cored, sliced 1/2 inch thick
  • 1/3 cup currants or raisins
  • 1/3 cup green onions, sliced
  • 1 Tbs. plus 1 tsp. cornstarch
  • 2 Tbs. plus 2 tsp. water

Heat oil in a heavy nonstick skillet over medium-high heat. Cook pork chops 2 minutes per side until browned. Season with salt and pepper to taste. Combine apple cider and mustard in a bowl and pour over pork chops. Reduce heat to low, cover and simmer 45 minutes. Add next 3 ingredients. Cover and simmer another 5-10 minutes. Transfer pork chops and apples to a serving platter and keep warm. Combine cornstarch and water in a jar with a tight-fitting lid. Shake well and gradually stir into cider liquid. Cook and stir until thickened. Serve sauce over pork chops and apples.
