Texas-Style Pork Barbecue
Prep: 10 min, Cook: 25 min.
  • 2 tsp. unsalted butter
  • 1/4 cup onion, coarsely chopped
  • 1 clove garlic, crushed
  • 3/4 cup chili sauce
  • 1 Tbs. brown sugar
  • 1 Tbs. vinegar
  • 1 Tbs. molasses
  • 1 Tbs. water
  • 1 tsp. lemon juice
  • 1 tsp. prepared mustard
  • 1/4 tsp. liquid smoke
  • 1/8 tsp. ground red pepper
  • 4 onion rolls, split and toasted
  • 3/4 lb. boneless cooked pork loin, thinly sliced

Melt butter in a heavy nonstick saucepan over medium heat. Sauté onion and garlic until tender. Stir in next 9 ingredients and season with salt to taste. Bring to a boil, reduce heat and simmer about 15 minutes, uncovered. Add pork slices to saucepan and stir gently to coat pork with sauce. Continue to heat about 5 minutes, until pork is heated through. To serve, place pork on bottom half of rolls and top with roll tops. Serve any extra sauce on the side.
