Tomato-Basil Pork Scaloppine
Prep: 10 min, Cook: 10 min.
  • 8 pork loin medallions, about 2 ounces each
  • 1 Tbs. olive oil
  • 1-1/4 shallots, chopped
  • 1 clove garlic, crushed
  • 1-1/3 cups tomatoes, peeled and diced
  • 2 Tbs. plus 2 tsp. scallions, chopped
  • 1 Tbs. plus 1 tsp. fresh basil, chopped
  • 2 Tbs. plus 2 tsp. dry white wine

Flatten medallions gently with heel of hand. Heat oil in a heavy nonstick skillet over medium-high heat. Sauté pork, shallots. and garlic 3-5 minutes, until pork is browned. Add remaining ingredients and simmer an additional 3-4 minutes. Serve over rice or linguine if desired.
