Carne Asada
Prep: 10 min, Marinate: 8:00, Cook: 5 min.
  • 3 lbs. boneless beef chuck roast, cut across the grain into 1/4 inch slices
  • 1 cup lime juice
  • 1/2 cup orange juice
  • 3/4 cup vegetable oil
  • 1/4 cup vegetable oil
  • 1/4 cup onion, chopped
  • 1/4 cup canned chopped green chili peppers, undrained
  • 3 cloves garlic
  • 8 large flour tortillas, warm
  • skewers

Thread meat onto skewers and arrange in a shallow dish. Combine remaining ingredients, except tortillas, in a bowl. Mix thoroughly and pour over meat. Cover and marinate in refrigerator overnight, turning meat occasionally. Prepare grill or turn on broiler. Grill or broil 4-5 minutes, turning once and basting with marinade. Serve immediately by removing meat from skewers and placing in tortillas.
