Marinated Pork Salad
Prep: 15 min, Marinate: 1:00, Cook: 10 min.
  • 11 ounces boneless pork tenderloin chops, cut into 1/4 inch slices
  • 2 Tbs. plus 2 tsp. Italian dressing
  • 1/4 cup mayonnaise
  • 2 tsp. lemon juice
  • 1-1/4 tsp. Worcestershire sauce
  • 1/8 tsp. hot red pepper sauce
  • 1 cup Romaine lettuce, washed and torn
  • 1/2 cup croutons
  • 1 Tbs. plus 1 tsp. Parmesan cheese

Place pork in a non-metal bowl. Pour dressing over and marinate at least 1 hour, turning once or twice. Combine next 4 ingredients in a bowl. Broil or sauté pork 3-5 minutes per side, or until cooked through. Cut into 1/2 inch strips. Combine pork, romaine, croutons, cheese and pepper to taste in a bowl. Serve topped with a spoonful of dressing.
