Grilled Chicken Kabobs
Prep: 10 min, Marinate: 2:00, Cook: 15 min.
  • 1/4 cup water
  • 2 Tbs. soy sauce
  • 2 Tbs. lemon juice
  • 1 Tbs. honey
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground ginger
  • 4 boneless skinless chicken breast halves, cut into 1-1/2 inch pieces
  • skewers
  • 1 green bell pepper, seeded and cut into 1-1/2 inch pieces
  • 1 onion, quartered
  • 8 large cherry tomatoes

Combine first 6 ingredients in a glass baking dish. Add chicken and turn to coat. Cover and marinate at least 2 hours in refrigerator. Prepare grill. Remove chicken from marinade and boil marinade 10 minutes in a saucepan. Alternate chicken and vegetables on skewers. Grill 6 inches from medium-hot coals 15-20 minutes, or until done, turning and basting often with marinade.
