Mediterranean Chicken-and-Rice Salad

- 3 Tbs. red wine vinegar
- 1-1/2 Tbs. olive oil
- 1/4 tsp. black pepper
- 1 clove garlic, crushed
- 3 cups cooked rice
- 1-1/2 cups cooked chicken, diced
- 1/2 cup bottled roasted red bell peppers, drained and diced
- 1/4 cup medium pitted ripe olives, drained and halved
- 1/4 cup fresh chives, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh oregano, chopped
- 14 ounces artichoke hearts, drained and quartered
Combine vinegar, olive oil, pepper and minced garlic in a small bowl. Set dressing aside. Combine rice and remaining ingredients in a large bowl and add dressing, stir until well blended.
